Ingredients
1/4 Cup olive oil
2 Tablespoons chives, chopped
1 Tablespoon lemon juice
1/2 Teaspoon minced garlic
1/2 Teaspoon salt
1/4 Teaspoon pepper
1 Cup orzo pasta
2 Cups broccoli florets
2 Cups cooked ham, cubed
1/2 Cup mozzarella cheese, cubed
1/4 Cup olives, halved
2 Green onions, chopped
Instructions
In bowl, combine olive oil, chives, lemon juice, garlic, salt and pepper, set aside. Prepare orzo pasta according to package directions adding broccoli to boiling water during last minute of cooking; drain. In bowl, stir together orzo pasta/broccoli mixture, ham, mozzarella cheese, olives, and green onions until blended. Add dressing; toss to coat then spoon mixture onto serving platter. Serve with tomato slices and pita triangles.
