Marinated Potato Salad with Peas

Ingredients

4 Red or white potatoes
1/4 Cup Italian salad dressing
1/2 Teaspoon salt
1/8 Teaspoon black pepper
1/2 Cup cucumber, chopped
1/2 Cup mayonnaise or salad dressing
1 Pound fresh peas
3 Hard-boiled eggs, chopped
2 Green onions, thinly sliced

Instructions

In a medium saucepan, cook the potatoes in boiling water, until tender; about 35 to 40 minutes.
While the potatoes are still slightly warm, peel & cube them.
In a large bowl, combine the potatoes, Italian salad dressing, salt & pepper, tossing gently to coat the potatoes. Cover & refrigerate for at least 1 hour or until chilled.
Gently stir the remaining ingredients into the potatoes. Cover & refrigerate again to allow the flavors to blend.
