Ingredients
6 Cups broccoli florets, broken into small pieces
1 Cup cherry tomatoes, halved
1 Cup Colby & Monterey Jack cheese crumbles
1/2 Cup red onion, thinly sliced
2 Tablespoons sunflower kernels
1 Tablespoon poppy seed
1/2 Cup raspberry vinaigrette dressing, (or make your own...recipe below)
2 Teaspoons Dijon mustard
1 Tablespoon sugar
Instructions
Mix broccoli, cherry tomatoes, cheese, onions, sunflower kernels and poppy seed in large bowl.
Stir together dressing, mustard and sugar until well blended. Pour over broccoli mixture; toss to coat. Refrigerate at least 4 hours or overnight.
Raspberry Vinaigrette
Ingredients
1/2 Cup vegetable oil
1/4 Cup raspberry vinegar
4 Teaspoons sugar
2 Teaspoon Dijon mustard
Preparation
In a small bowl or jar with tight-fitting lid, combine all ingredients. Mix or shake well. Store in the refrigerator.
