Ingredients
1/4 Cup red onion, finely chopped
1 Tomato, diced
1/2 Cucumber, coarse chopped
1 (15 oz) Can garbanzo beans, drain & rinse
Dressing
4 Teaspoons chopped fresh oregano OR 1 Teaspoon dried oregano
1 Tablespoon chopped fresh parsley OR 1 Teaspoon dried parsley flakes
1 Teaspoon grated lemon peel
1/4 Teaspoon salt
1/8 Teaspoon pepper
4 Teaspoons lemon juice
1 Tablespoon extra-virgin olive oil
Instructions
In a medium bowl, combine all salad ingredients. In small bowl or jar with tight-fitting lid, combine all dressing ingredients; stir or shake until well combined. Pour dressing over salad; toss well.
