Ingredients
3 Cups fresh Italian or French bread cubes
6 Tablespoons extra virgin olive oil
2 Tablespoons fresh oregano, chopped
2 Tablespoons garlic, minced
1 Teaspoon salt
3/4 Teaspoon pepper
Pinch dried red pepper flakes
1 Pound plum tomatoes, diced
1/2 Pound fresh mozzarella cheese, diced
1/4 Pound mushrooms, sliced
2 Ounces sliced Italian salami, in strips
2 Green onions, sliced
1 Bunch arugula, torn
Instructions
Spread bread cubes on cookie sheet and let stand 2 hours. Whisk oil, oregano, garlic, salt, pepper and pepper flakes together in large bowl. Add remaining ingredients except arugula. Toss. Let stand 15 minutes. Add arugula, toss well and serve at once.
