Ingredients

5 Pounds red potatoes, cooked with skins on
5 Stalks celery, chopped
1 Large onion, chopped
3/4 Pound bacon, cut in pieces
3/4 Cup white vinegar
2 Cups water
1 Cup sugar
1/3 Cup fat from bacon
2 Tablespoons flour
1/2 Teaspoon salt
1/4 Teaspoon pepper
2 Teaspoon salt

Instructions

While potatoes are cooking, chop celery and set aside. Chop onions and set aside. Fry bacon, chop in to small pieces and set aside. Remove bacon from fat, add onions to fat and saut�. Remove onion from fat and remove fat from pan. Re-add 1/3 cup of fat to pan. Add flour and brown slightly, add vinegar, water, salt, sugar and pepper. Cook until clear.
Peel potatoes and cut into slices while still hot. Add the 2 teaspoons of salt to hot peeled potatoes. Add onion, celery, bacon and sauce to potatoes.
Let stand for several hours to let flavors blend.
Garnish with bacon or parsley.
