Ingredients
1 (15 1/2 oz) Can garbanzo beans, drained
1 Tablespoon balsamic OR red wine vinegar
Adobo with chipotle pepper, to taste
1 (6 oz) package baby spinach
1/2 Onion, finely chopped
3 Tablespoons olive OR vegetable oil
Instructions
In a bowl, toss together garbanzo beans, spinach and onions. Pour vinegar into a bowl, drizzle in oil, whisking constantly, until combined; season with Adobo to taste. Pour dressing over salad. Toss to coat and serve.
