Ingredients

1 Pound fresh green beans, cut into 2" lengths
1/2 Cup red onions, thinly sliced
3 Roma tomatoes, seeded & diced
Dressing
1/4 Cup extra virgin olive oil
2 Tablespoons red wine vinegar
1 Garlic clove, minced
1 small Roma tomato, seeded & diced
3 Tablespoons freshly chopped thyme leaves
Pinch of salt
Dash of pepper

Instructions

Bring large pot of water to boil. Add beans and cook about 8 minutes or until tender. Drain and transfer beans to a bowl of ice water. This will preserve color. Drain again and let dry. Whisk together all dressing ingredients and puree in blender. Toss together beans, onions, tomatoes and dressing. Sprinkle with additional salt and pepper if desired. Refrigerate up to 4 hours or serve at room temperature.
