Ingredients
1/2 Pound penne pasta
3 Medium tomatoes, diced
1/2 Cup green olives, chopped
1/2 Cup black olives, sliced
1 Cup marinated artichoke hearts, drained
1 Zucchini, diced
1 (15 oz) Can garbanzo beans, drained
1/2 Cup fresh parsley, chopped
1/2 Cup crumbled feta cheese
Fresh lemon juice
Dressing
1/4 Cup olive oil
1/4 Cup pine nuts
1 Garlic clove, minced
Juice of 1 lemon
Pinch of salt
Dash of pepper
Instructions
Cook pasta per package directions. While pasta is cooking, mix all dressing ingredients. Cook 5 minutes on medium heat. Set aside. When pasta is tender, toss with dressing then add tomatoes, olives, artichoke hearts, zucchini, beans, parsley and feta cheese. Toss well and top with a squeeze of fresh lemon juice per serving.
