Ingredients
1 Pound Roma tomatoes, chopped
1 English cucumber, halved lengthwise & sliced
1/2 Medium red onion, coarsely chopped
2 Avocados, diced
2 Tablespoons extra virgin olive oil
2 Tablespoons fresh lemon juice
1/4 Cup cilantro, chopped
3/4 Teaspoon sea salt
1/4 Teaspoon black pepper
Instructions
Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro into a large salad bowl.
Combine olive oil and lemon juice. Drizzle over salad and toss gently to combine. Just before serving, toss with sea salt and black pepper.
