Ingredients

2 Pounds potatoes, cooked & cubed
2 Red peppers, cubed
2 Celery sticks, sliced
1 Shallot, chopped
3 Green onions, sliced
1 Garlic clove, crushed
1 Teaspoon basil
1 Tablespoon fresh parsley, finely chopped
3 Tablespoons half & half cream
1 Tablespoon mayonnaise
1 Teaspoon prepared mustard
1/2 Teaspoon sugar

Instructions

Place the potatoes in a large salad bowl. Add the other vegetables, together with the garlic & herbs.
Blend the cream, mayonnaise, mustard & sugar in a small bowl, stirring until the mixture is well combined.
Pour the creamy dressing over the prepared potato & vegetables salad & stir gently to coat evenly.
Serve the salad garnished with finely chopped green onion.
