Ingredients
3/4 Pound macaroni
1/2 Cup mayonnaise
4 Teaspoons Dijon mustard
1/2 Lemon, zest finely grated
1/2 Teaspoon lemon juice
1/4 Teaspoon sugar (optional)
1 1/2 Cups diced ham
2 Celery stalks with the leaves, thinly sliced
3 Tablespoons flat-leaf parsley, finely chopped
Instructions
In a pot of boiling salted water, cook the macaroni until al dente; about 12 minutes. Drain & toss lightly with oil. Let it cool.
In a large bowl, whisk together the mayonnaise, mustard, lemon zest, lemon juice & sugar (if using).
Add the cooled macaroni, ham, celery & parsley and season to taste with salt & pepper, mix well to combine.
