Ingredients

DRESSING
1/4 Cup rice vinegar
3 Tablespoons olive oil
2 Tablespoons lemon juice
SALAD
1 Cup lentils, cooked
1 Cup canned kidney beans, rinsed
1 Cup canned chickpeas
1/4 Cup onion, chopped
1 Cup celery, chopped
2 Garlic cloves, chopped
16 Black olives, pitted & sliced in half

Instructions

Whisk dressing ingredients in a large bowl. Add remaining ingredients to bowl. Toss to mix and coat. Refrigerate salad 2 hours.
