Ingredients
8 Ounces bow tie pasta, cooked, drained & cooled
1 (4 oz) Can chopped green chilies, drained
3 Tablespoons lime juice
3 Tablespoons canola oil
2 Garlic cloves, minced
1 Teaspoon ground cumin
1/2 Teaspoon sugar
1/2 Teaspoon hot pepper sauce
2 Cups chicken thighs, cooked & cubed
2 Large tomatoes, chopped
1/3 Cup red onion, chopped
3 Tablespoons fresh cilantro, minced
Instructions
For dressing, combine the chilies, lime juice, oil, garlic, cumin, sugar and hot pepper sauce in a small bowl; stir well. In a large bowl, combine the pasta, chicken, tomatoes, onion and cilantro. Add dressing and toss gently to coat. Cover and refrigerate overnight.
