Ingredients
14 Ounces Farfalle pasta
1 1/2 Pounds carrots
1 (1�) piece root ginger
4 Spring onions
4 Tomatoes
4 Tablespoons olive oil
1 Tablespoon lemon juice
1 Tablespoon white wine vinegar
Instructions
Cook the pasta. Drain, rinse under cold water and add a little olive oil to prevent sticking.
Wash and grate the carrots. Peel and grate the ginger. Finely slice the spring onions and tomatoes. Mix these vegetables together.
Combine the oil, lemon juice and vinegar in a screw-topped jar and shake to mix. Pour over the vegetables and mix with the pasta.
