Ingredients

14 ounces cooked rice
8 ounces frozen chopped broccoli, thawed
8 ounces chopped fresh mushrooms
1/2 cup chopped onion
1/2 Garlic clove, minced
1/2 tablespoons extra virgin olive oil
1/2 teaspoons salt, divided
1/4 teaspoons ground black pepper, divided use
1/8 teaspoons ground nutmeg, divided use
2 large eggs, separated
3/8 cups milk
1/2 cup grated Gouda cheese

Instructions

Combine rice and broccoli in large mixing bowl. Cook mushrooms, onion and garlic in oil over medium heat until onion is tender crisp, add salt, pepper and nutmeg.
Stir mixture into rice and broccoli and mix well, spoon into shallow 2 quart baking pan.
Beat egg yolks with milk and add cheese.
Beat egg whites until stiff but not dry, fold into yolk mixture, spread over rice mixture..
Bake at 350�F for 15 to 20 minutes or until mixture is hot and bubbly and top is lightly browned.
