Ingredients

5 Slices bacon, chopped
1 Large onion, pealed & chopped
2 Carrots, pealed & chopped
1 Potato, pealed & finely chopped
1 Cup green split peas, rinsed
2 1/2 Cups vegetable or chicken stock
1 Clove garlic, pealed & minced
1 Bay leaf
Salt & pepper to taste

Instructions

In a 5-quart or larger pressure cooker, heat bacon over medium high heat. After bacon has released some oil, stir in onion and cook until transparent. Add carrots, potato, split peas and stock, mix well, cover and bring to pressure. Cook at pressure with rocker moving slowly for 15 minutes. Remove from heat and let depressurize naturally.
Note: Add ham bones or hocks during cooking time for more flavor.
