Ingredients
1 Pound chicken gizzards
1 Cup chicken broth
1/3 Cup cilantro leaves, chopped
Salt & pepper to taste
1 Tablespoon minced garlic
1 Medium onion, minced
1/3 Cup red wine
1 Tablespoon cornstarch
Instructions
Place gizzards, broth, onion, garlic and cilantro in pressure cooker and cook on high pressure for 30 minutes. Quick release pressure and remove gizzards from broth, cool slightly then slice thin. Thicken broth with cornstarch mixed in wine and add to broth. Return sliced gizzards to cooker. Stir over medium heat as it thickens. Serve over toast points, or fresh biscuits.
