Ingredients

2 Bacon slices, diced
6 Chicken pieces
2 Onions, coarsely chopped
2 Carrots, sliced
3 Celery sticks, sliced
1/2 Cup chicken broth
1 Tablespoon tomato paste
1 Teaspoon rosemary leaves
1/2 Teaspoon thyme leaves
Salt & pepper to taste
1 Tablespoon cornstarch

Instructions

Saut� bacon and chicken in cooker until golden. Add vegetables, chicken broth, tomato paste and seasonings and stir well. Close cooker and bring up to pressure on high heat then reduce heat to low and cook for 8 minutes. Reduce pressure using natural release method. Open lid and remove chicken to a serving dish; keep warm. Skim fat from liquid in cooker. Mix cornstarch with a little water until smooth. Return open cooker to heat and stir in cornstarch mixture. Cook, stirring constantly until thickened, spoon over chicken.
