Ingredients
3 Cups cooked rice, cooled
2 Teaspoons oil
3 Eggs
1/2 Cup carrots, grated
1/4 Cup celery, chopped
1/2 Cup mushrooms, sliced
1/4 Cup green onions, sliced
1/2 Cup frozen peas
1/2 Cup cooked meat, shrimp, ham or chicken, chopped
3 Tablespoons soy sauce
Instructions
In large skillet, heat 1 teaspoon oil over medium heat. Beat eggs with fork. Cook and stir until scrambled. Remove from pan and cut into thin strips, set aside. In same pan, heat remaining 1 teaspoon oil and saut� carrots, celery, and mushrooms for 5 minutes or until mushrooms are soft. Stir in green onions and cook for 1 minute. Add peas, meat, and rice. Sprinkle with soy sauce and toss gently. Stir in scrambled eggs. Cover and cook 3 to 4 minutes or until heated through.
