Ingredients
1 1/2 Pounds chicken, chopped small
1 Pound, mixed frozen vegetables
2 Cups rice, steamed
2 1/2 Tablespoons Extra-virgin olive oil
1 Tablespoon Soy sauce
1/4 Teaspoon salt
1 1/2 Teaspoons brown sugar
2 Green onions, chopped
1/4 Cup cilantro, finely chopped
1 Teaspoon garlic, finely chopped
Instructions
In a large fried rice pan cook garlic in olive oil until golden brown. Add chicken, salt and sugar and cook on medium heat until chicken is done, about 15 to 20 minutes. Add steamed rice, Soy sauce and mixed vegetables. Reduce heat to low and cook about 15 minutes, stirring occasionally. Serve hot.
