Ingredients
1/4 Cup olive oil
2 Pounds potatoes, peeled & thinly sliced
2 Medium onions, thinly sliced & separated into rings
2 Green peppers, cored, seeded & cut into strips
2 Red bell peppers, cored, seeded & cut into strips
1 (10 1/2 oz) Can chicken broth
6 Garlic cloves, minced
1 Teaspoon dried thyme
Salt & pepper to taste
Instructions
Spread olive oil evenly in the bottom of a 12� x 16� roasting pan. Layer potatoes in bottom of the pan then layer onions and peppers evenly on top.
Mix together the broth, garlic, thyme and seasonings and pour evenly over all. Tent loosely with foil and bake at 350�F for about 1 hour or until potatoes and peppers are tender.
