Ingredients
8 Medium potatoes, cut into bite size pieces
1 Large onion, cut into bite size pieces
2 Bell peppers, cut into bite size pieces
1 Cup mushrooms, chopped
5 Bacon slices, cooked & crumbled
1 Package onion soup mix
1/4 Cup olive oil
Instructions
In a large casserole dish or roaster, add the potatoes, bell peppers, mushrooms & bacon.
Sprinkle the onion soup mix on to of the vegetables. Mix well.
Drizzle oil over the mixture, mixing well.
Cover the pas loosely with either a lid or foil, allowing the steam to be able to escape & allow the vegetable to brown slightly.
Bake in a preheated 350�F oven for 1 1/2 hours.
