Ingredients
2 Pounds potatoes, boiled & peeled
1/4 Cup butter, softened
2 Eggs, beaten
1/3 Cup heavy cream
Salt
Pepper
2 Tablespoons onion, grated
1/2 Pound thick sliced bacon, cut into 1/2" strips
Instructions
While potatoes are still warm, force through sieve or food mill or mash. Stir in butter. Beat eggs with cream and stir into potatoes. Season with a little salt and pepper; stir in onion. Spoon potato mixture into a buttered baking dish and smooth top with a spatula. Stick the bacon strips into the potatoes. Bake in preheated 350�F oven for 15 to 20 minutes or until potatoes are brown and bacon is crisp.
