Ingredients
5 Cups potatoes, peeled & boiled
4 Hard boiled eggs, coarsely chopped
5 Celery ribs, diced
5 Green onions, chopped
1/2 Large yellow onion, diced
1 1/2 Cups mayonnaise
1/4 Cup pickled jalapenos, chopped
1 Tablespoon juice form jalapenos
1/8 Cup parsley, chopped
1 Teaspoon comino or cumin
1/2 Tablespoon black pepper
1/2 Tablespoon salt
Instructions
In large bowl, combine potatoes, celery and both onions. Combine remaining ingredients and add to potato mixture. Mix well and chill several hours or overnight.
This potato salad goes great with barbecue and baked beans.
