Ingredients
3 1/2 Pounds baking potatoes, peeled & cut into 1" cubes
1 Teaspoon salt, divided
1 (16 oz) Can sweet potatoes in syrup, drained & mashed
1 (8 oz) Package cream cheese, softened
6 Bacon slices, cooked & crumbled
3/4 Cup sour cream
2/3 Cup chicken broth
1/2 Teaspoon fresh ground black pepper
Crumbled bacon, to garnish
Instructions
Bring baking potatoes, 1/2 teaspoon salt and water to a boil, cook 30 minutes or until potatoes are tender; drain.
Return potatoes to pan and add sweet potatoes, cream cheese, and mash until smooth. Stir in bacon, sour cream, chicken broth, black pepper and 1/2 teaspoon salt.
Spoon mixture into lightly greased 11" x 7" baking dish. Bake uncovered at 350�F for 20 minutes. Garnish top with crumbled bacon.
