Ingredients
1 Pound fresh ground pork, about 75% lean
1 Teaspoon fresh ground black pepper
1 1/2 Teaspoons salt
1 Teaspoon sugar, dissolved with 2 teaspoons cold water
1 Tablespoon parsley, coarsely chopped
1 Tablespoon fresh basil, coarsely chopped
1/2 Teaspoon oregano, dried
2 Dashes nutmeg
Instructions
Mix all ingredients well, form into 6 equal portions and press into patties. Brown on both sides and cook through. Use in your favorite recipes!
For hot sausage
Add 1 teaspoon paprika, 1 teaspoon crushed fennel seeds, 1 teaspoon dried hot pepper flakes with no seeds and 1 teaspoon chopped garlic.
