Ingredients

4 Pounds boneless pork butt or shoulder, cut into 1 1/2" cubes
1/4 Red pepper
1 1/2 Tablespoon salt
1 Teaspoon black pepper
1 Teaspoon dried sage
***Additional seasonings***
Coriander
Thyme
Sage
Marjoram
Ground bay leaf
Summer savory
Additional hot red pepper

Instructions

Sausage is best when there is one part fat to three parts meat. Assemble food grinder with desired grinding disc. Grind pork. Combine pork and seasonings. Shape into patties or stuff in link sausage using the sausage maker accessory.
Makes 4 pounds
