Ingredients
1 Tablespoon olive oil
2 Garlic cloves, minced
4 Pork rib chops, about 1" thick
1/2 Cup sour cream
1/2 Cup heavy cream
1/4 Teaspoon dried thyme
1/2 Teaspoon salt
2 Teaspoons black pepper
Instructions
In large skillet, heat oil over medium heat and saut� the garlic for 1 to 2 minutes or until golden. Add the pork chops and cook for 10 to 12 minutes, turning once. Remove chops from skillet and drain liquid from skillet. Reduce heat to low and add the remaining ingredients to the skillet; mix well. Heat the mixture for 2 to 3 minutes, until heated through. Return the chops to the skillet and coat with the sauce. Continue cooking for 6 to 8 more minutes, until medium or to desired doneness beyond that. Spoon remaining sauce over the cooked pork chops.
Note: for a fuller black pepper flavor, use fresh cracked black peppercorns. Simply grind the pepper in a pepper mill or if you don't have one, place 2 teaspoons whole peppercorns in a resealable plastic storage bag. Seal the bag and use a mallet or rolling pin to crack the peppercorns on a durable surface.
