Preheat oven to broil. Grill, broil or bake pork chops to your liking. Meanwhile, in a small bowl, mix together remaining ingredients. When pork chops are done, spoon mustard mixture evenly on top of each chop. Broil 8 minutes or until topping is golden brown. The mixture of the mustard and the melted cheese with the tarragon is fantastic. This topping also works well on steak.
