Ingredients

2 Tablespoons olive oil
1 (2 lb) Pork fillet cut in 1� cubes
3/4 Cup all-purpose flour, seasoned with salt & pepper
1 Large onion, chopped
2 Cups beef stock
1 Teaspoon ground coriander
1 Garlic clove, finely chopped
1 Green chile, seeded & chopped
2 Tomatoes, peeled & chopped
1 Red bell pepper, chopped
1 (20 oz) Can pineapple chunks, drained
2 Medium sweet potatoes, peeled & diced
1 Tablespoon cilantro, finely chopped, to garnish

Instructions

Preheat oven to 350�F. Heat oil in a large heavy skillet. Toss pork in flour; add to skillet and cook until evenly browned, turning frequently. Transfer meat to a large flameproof casserole dish. Add onion to skillet and cook until soft; add a little more oil if necessary. Stir in stock and bring to a boil, stirring. Add coriander, garlic, chile, tomatoes and bell pepper. Simmer 5 minutes. Add to pork in dish, cover and bake 1 1/2 to 2 hours or until tender. Add pineapple and sweet potatoes. Return to oven and bake 20 to 25 minutes or until potatoes are tender. Garnish with cilantro.
