Ingredients

1 Tablespoon olive oil
1 Medium onion, chopped
4 Ounces fresh mushrooms, sliced
1 Garlic clove, peeled & chopped
1 1/2 Pounds boneless pork loin, cut into bite-size pieces
1 (14 1/2 oz) Can diced tomatoes
1 Teaspoon dried Italian seasoning
1/2 Teaspoon sugar
1/2 Teaspoon salt
1/4 Teaspoon black pepper
3 Cups cooked white or brown rice

Instructions

Heat the oil in a large non-stick skillet over medium-high heat. Add the onion, mushrooms & garlic. Cook for 3 minutes, stirring occasionally, until softened.
Stir in the pork, tomatoes, Italian seasoning, sugar, salt & black pepper.
Cover the skillet & simmer over medium-low heat, stirring occasionally, for 10 minutes.
Serve with hot cooked rice.
