Ingredients

1 Pound pork tenderloin, sliced
1 Cup onion, chopped
2 Cups fresh mushrooms, sliced
1 Garlic clove, minced
2 Tablespoons butter
1 Beef bouillon cube, dissolved in 3/4 cup water
1/4 Cup cooking sherry
1 Tablespoons paprika
1 Cup uncooked rice
2 Cups water
1 Tablespoon butter
1 Teaspoon salt
1 1/2 Tablespoons cornstarch, blended with 1/4 cup water
1/2 Cup sour cream

Instructions

Cook pork, onion, mushrooms and garlic in 2 tablespoons butter until tender. Stir in broth, sherry and paprika. Simmer for 20 minutes. Measure rice, 2 cups water, 1 tablespoon butter and salt into a saucepan. Bring to a boil. Stir once or twice. Reduce heat; cover and simmer 15 minutes or until tender and liquid is absorbed. Thicken meat mixture with cornstarch blended with 1/4 cup water. Stir in sour cream just before serving; spoon meat over rice.
