Ingredients
1 (4 lb) Pork loin roast
Salt & pepper to taste
2 Cups sauerkraut with liquid
1 Teaspoon caraway seeds
2 Tablespoons brown sugar
1 Granny smith apple, cored & sliced
Instructions
Cut pork loin, if necessary, to fit in the crockpot; season with salt and pepper. Combine sauerkraut, caraway seeds and brown sugar well. Place half the sauerkraut in bottom of crockpot followed by pork loin, apple slices and remaining sauerkraut on top.
Cook on HIGH for 1 hour; reduce heat to LOW and cook for 5 to 6 hours. Internal temperature of the roast should be at least 160F.
