Ingredients
1 Pound mild Italian Sausage, bulk or casings removed
2 Garlic cloves, finely minced
3 Tablespoons flour
1 (10 oz) Package leaf spinach, defrosted & squeezed dry
1 Cup milk or half & half
1/2 Cup dry white wine
1 Can chicken broth
Freshly ground black pepper
3 Cups penne pasta, cooked & drained
4 Tablespoons grated Parmigiano Reggiano cheese
Instructions
Heat a very large skillet, melt butter and oil and saut� onion and garlic until translucent. Add sausage meat and spices to the onion mixture and cook on moderate heat for 10 to 15 minutes, or until the sausage is completely cooked. Add the cream and reduce by 1/3rd. This should take about 5 minutes on moderate heat. Stir very frequently to insure it doesn't stick or burn. Taste, adjust seasoning with salt and pepper and whatever else you want to add. Pour over hot pasta.
