Ingredients

1 1/2 Cups water
1 1/2 Cups carrots, sliced
1 Medium onion, chopped
1 Small green pepper, chopped
1/2 Cup celery, chopped
1 Teaspoon instant chicken bouillon granules
1/4 Teaspoon ground white pepper
1/4 Cup butter
1/3 Cup all purpose flour
2 Cups milk
1 Cup water
8 Ounces fully cooked ham, diced
1 1/2 Cups spinach, fresh chopped

Instructions

In a medium saucepan, combine the 1 1/2 cups water, carrots, onion, green pepper, celery, bouillon and pepper. Bring to boiling.
Reduce heat; simmer, covered, for 10 minutes. Don't drain.
In a large saucepan, melt the butter. Stir in flour. Add milk and 1 cup water all at once. Cook and stir till thickened and bubbly. Cook for 1 minute more.
Add the vegetable mixture and ham to the large saucepan. Heat through. Stir in the spinach. Serve immediately.
