Ingredients
2 Eggs, beaten
1 Teaspoon vegetable oil
1/2 Cup ham, diced
1/3 Cup green onion, sliced
1/4 Cup carrots, shredded
1/4 Cup frozen peas, thawed
1 3/4 Cups cooked rice
4 Tablespoons soy sauce
1/8 Teaspoon pepper
Instructions
Cook eggs in saut� pan with butter-flavored cooking spray. Cook like and omelet until done, then transfer to cutting board and cut into shreds.
Put vegetable oil in skillet on high heat, add ham, onions, carrots and peas. Stir-fry about 1 minute.
Add shredded eggs, rice, soy sauce and pepper stirring until heated through.
