Ingredients
1 Tablespoon cooking oil
8 Ounces pork loin or boneless, skinless chicken breast, cut into thin strips
2 Medium carrots, thinly bias-sliced
1 1/2 Cups small broccoli florets
2 Garlic cloves, minced
2 Green onions, bias sliced
3 Tablespoons chopped honey-roasted peanuts
1 Tablespoon grated fresh ginger
1 Tablespoon reduced-sodium soy sauce
1 Teaspoon toasted sesame oil
1/4 Teaspoon crushed red pepper
1/4 Cup bottled plum sauce
1/4 Cup water
2 Cups hot cooked rice
Instructions
Pour cooking oil into a wok or large skillet. Preheat over medium-high heat. Add pork or chicken, carrots, broccoli, and garlic; cook and stir for 3 minutes. Add green onion, peanuts, ginger, soy sauce, sesame oil, and crushed red pepper. Cook and stir for 2 minutes more. Stir in plum sauce and water; heat through. Serve over rice.
