Ingredients

6 Garlic cloves, unpeeled
2 Medium onions, chopped
8 Ounces mushrooms, sliced
2 Tablespoons olive oil
8 Ounces orzo (rice shaped pasta)
2 Cups chicken broth
1/4 Cup parsley, chopped
Salt & pepper to taste
2 Tablespoons grated Parmesan cheese

Instructions

Wrap garlic in foil. bake in 450�F oven for about 15 minutes or until soft. Cook and stir onions and mushrooms in olive oil in large skillet until golden brown and tender. Meanwhile, cook orzo in water and chicken broth according to package directions, drain and transfer to serving bowl. Remove garlic form foil packet. Squeeze cloves from skins into small bowl and discard skins. Mash garlic with fork. Stir garlic, vegetables and parsley into hot drained orzo. Add salt and pepper to taste. Sprinkle with cheese. Serve warm.
