Ingredients

3/4 Pound gemelli pasta
1 Onion, chopped
2 Tablespoons olive oil
1 Pound ground pork
2 Cups frozen corn kernels
2 Garlic cloves, chopped
2 Cups grated cheddar cheese
4 Green onions, chopped
Salt & pepper to taste
Ingredient note: Gemelli is pasta in the form of two short rods twisted around each other.

Instructions

In a pot of lightly salted boiling water, cook the pasta until al dente.
Drain the pasta & oil it lightly, keeping 1/2 cup of the cooking water aside.
Meanwhile, in a saucepan, soften the onion in the oil.
Add the meat & cook while crumbling, until it is golden brown; season to taste with salt & pepper.
Add the corn & garlic to the meat. Cook for about 2 minutes.
Add the pasta, cheese, green onions & the reserved cooking water. Toss to coat the pasta & warm through.
Taste & adjust the seasoning to taste.
