Ingredients
6 Medium Vidalia onions - chopped
2 Medium carrots - chopped
2 Celery stalks - chopped
3 Quarts broth (or water)
1 Cup tiny pasta or rice
Optional
1 Yellow squash or zucchini sliced in 1/4" chunks
2 Tablespoons soup/gravy starter or bouillon
2 Garlic cloves
OR
1/2 teaspoon powder cracked fresh pepper
Grated Romano or Parmesan cheese
Green onion, sliced in 1/2" slices
Instructions
Preheat Nesco to 300F. Place one quart liquid in cookwell. Prepare vegetables, starting with carrots. Add carrots to liquid and finish preparing the onions and celery. Add to liquid. (If using squash, prepare later). Cover and cook for 1 hour stirring occasionally. Add the remaining liquid and all remaining ingredients except pasta, squash, pepper, cheese and green onions. Cook at 200F. for 4-6 hours.
Add squash and pasta. Cover and cook for 1/2 hour, stirring occasionally. Ladle in bowls. Sprinkle with fresh cracked pepper and cheese. Top with 3 or 4 green onion pieces for color.
