Ingredients
1 Cup long grain rice
1 Pound lean ground beef
1 Cup onion, chopped
1 1/2 Cups salsa, chunky style
1 (8 oz) Can tomato sauce
1 Cup cheddar cheese, shredded
Instructions
Cook rice according to package directions but omit the salt and butter.
In a large skillet brown ground beef and onion then drain off the fat. Stir in the salsa and tomato sauce. Bring to a boil, reduce heat, and simmer while rice is cooking for about 10 minutes.
Spread rice in a 11� x 7� baking dish which has been sprayed with nonstick cooking spray. Top with meat sauce and sprinkle with cheese. Bake at 350�F to melt the cheese.
