Ingredients
2 Tablespoons olive oil, can use up to 1/4 cup
1 Onion, finely chopped
1 Garlic clove, minced
2 Cups medium or long grain white rice
3 Cups chicken broth
1 Heaping tablespoon tomato paste
Or
1 Cup fresh or canned tomatoes, diced
Pinch oregano
1 Teaspoon salt
Instructions
In a large skillet, brown rice in olive oil over medium/high heat. Add onion and garlic and cook, stirring frequently, about 4 minutes or until onion is soft.
In a separate sauce pan, bring stick of butter to a simmer. Add tomato sauce, oregano and salt. Add rice and broth and bring back to a simmer. Lower heat and cook for 15 to 25 minutes or until rice is done. Turn off heat and let sit, covered, for 5 minutes.
