Ingredients

5 Large potatoes, peeled & diced
1 Teaspoon dry mustard
1 Pound pork sausage
6 Eggs
Salsa
Cheddar cheese, shredded
10 (8 inch) Flour tortillas

Instructions

Boil the potatoes in a large saucepan until they are soft, but not mushy. Drain, add dry mustard and keep warm until sausage is done.
In a large skillet, brown the sausage until done. Drain and set aside.
Coat a small skillet with vegetable cooking spray. Over medium heat, scramble the eggs.
Mix potatoes, sausage and scrambled eggs thoroughly and place into the flour tortillas. Add salsa, cheddar cheese and serve.
