Ingredients

1 Cup dry pinto beans soaked in cold water overnight
2 Cups diced ham
1 Medium onion, peeled & sliced in thin rings
1 Large or 2 small carrots, peeled & diced
2 Cloves garlic, minced
1 Cup tomato juice
Pepper, to taste
2 Jalapeno peppers, seeded & chopped
Dash hot sauce

Instructions

Discard soaking water and look through beans to discard broken beans or rocks. In a large pan, place beans with enough fresh, cold water to cover. Bring to a boil and simmer for 2 hours. Add remaining ingredients and simmer for 3 to 4 hours. Serve with sprigs of fresh cilantro, if desired.
