Ingredients

1 Pound lean ground beef
1 Package taco seasoning mix
2/3 Cup water
2 (16 oz) Cans refried beans
1 Large or 2 small cas of red enchilada sauce
6 Large flour tortillas
2 Cups of shredded cheddar or Mexican-blend cheese

Instructions

Preheat the oven to 375�F.
Cook the ground beef until it is well-done. Add the package of taco seasoning and 2/3 cup of water. Let it simmer.
In a bowl, combine the refried beans and the ground beef when done. Mix well.
In a large casserole pan, spread enough enchilada sauce to cover the bottom.
Take one tortilla and spread enough of the bean and meat mixture on it so that you can still roll it. Fold the tops up first and then roll the sides of the tortilla. Place seam side down in the casserole pan. Repeat for the rest of the tortillas. My casserole pan usually fits 4 burritos and I freeze the other 2 for later.
Cover the burritos with the rest of the enchilada sauce. Cook for approx. 30 minutes in preheated oven. Cover with cheese and cook for an additional 10 mins or until cheese is melted. Enjoy!
