Ingredients
2 Tablespoons olive oil
1 Cup red onion, diced
3/4 Cup celery, diced
1/2 Cup green bell pepper, diced
1 1/2 Tablespoons minced garlic
2 Tablespoons chipotle sauce (see below), or to taste
8 Cups chicken stock
3 Cups cooked chicken, diced
2 (14 1/2 ounce) Cans chopped tomatoes
1/4 Cup fresh lime juice
1/4 Cup minced fresh cilantro
1/2 Teaspoon ground cumin
Salt and Pepper to taste
Instructions
Heat oil in a large soup pot. Saut� the onion, celery, bell pepper and garlic until the onion is clear. Add all remaining ingredients and simmer for about 30 minutes. Garnish with tortilla chips and grated Monterey Jack cheese.
