Ingredients

1 Pound lean ground beef
2 (14 1/2 ounce) Cans diced tomatoes (see note below)
2 1/2 Cups Rotini pasta, uncooked
1 Small onion, diced
2 Stalks celery, diced
1 Small green pepper, diced
1 Package reduced sodium taco seasoning
1 Cup water
1/2 Cup shredded low fat cheddar cheese

Instructions

Saut� beef in large chicken fryer pan. Drain grease and add remaining ingredients except cheese. Cover and cook for 12-15 minutes on medium high heat or until liquid is absorbed. Remove from heat and sprinkle with cheese. Cover and let stand 1 minute to melt the cheese.
Note: For a spicier dish, replace one of the cans of diced tomatoes with a jar of your favorite salsa.
