Ingredients

3/4 Cup peanut oil
1/2 Cup soy sauce
1 Teaspoon sesame oil
1/2 Teaspoon white pepper
6 Large eggs, lightly beaten
3 Cups small diced cooked pork (grilled or smoked is best)
1 Cup green onions, cut on an angle and 1� long
6 Cups cold cooked rice
2 Cups bean sprouts

Instructions

Put oil in squeeze bottle for easy access. In small bowl, combine the soy sauce, sesame oil and pepper. Set aside. Heat wok until very hot. Squirt 1/4 cup of the peanut oil into the wok. Add the eggs and stir fry, breaking them up until they're cooked through. Remove the eggs from the wok. Squirt a little more of the oil into the wok and add the pork and green onions. Cook for 30 seconds, stirring often. Add another 1/4 cup of oil and then the rice. Stir often, breaking up the rice and moving everything around. Continue cooking for about 2 minutes or until the rice begins to brown. Add the soy sauce mixture and continue cooking and stirring. add the rest of the peanut oil, the eggs, and bean sprouts. continue stirring until everything is mixed well and hot. Remove from wok and serve.
