Asian Chicken Salad in Lettuce Cups

Ingredients

1 Deli rotisserie chicken
1 Cup carrots, shredded
1 (8 oz) Can sliced water chestnuts, halved
6 Green onions, diagonally sliced
1/4 Cup plain Greek or low fat plain yogurt
1/4 Cup Asian sesame salad dressing
1 Head lettuce, separated into leaves

Instructions

Remove and discard chicken skin and pull meat off bones. Tear meat into bite size pieces. Place in a bowl with carrots, chestnuts and green onion. In a bowl, whisk yogurt with salad dressing, toss with chicken mixture. spoon into lettuce leaves. Sprinkle with red pepper flakes, if desired then serve.
